Introducing further skills and concepts this course will cover more advanced figure modelling, flood work cookies, wired flowers and show you how to carve, ganache and ice a shaped cake.

Please note: An additional cost for each enrolee for specialist equipment, specific to this class, is due to the tutor at the first session. The cost of the kit for this class is $40 and must be paid for in cash. All kits are discounted to warehouse prices. Each student will need their own set of equipment. With the time constraints of the class it is not possible to share. In addition to your kit you will need to supply an 8” or 20cm square cake in week 4, cookies and 2 batches of royal icing (recipe provided) in week 2 and modelling paste in week 3. The recipe for the modelling paste is the same as in Introduction 1. Carry over items from Introduction 1 and Introduction 2 kits needed: CMC, Sugar Glue, Ball tool, working mat, piping tip 3, couplers and piping bags, spatula and rolling pin.
